“The fun thing about the STAUB cocottes is that you can gather around the table and enjoy a one-pan dish made on fire.“
While visiting a barbecue competition in Colorado, Jord saw hundreds of professionals and amateurs preparing the finest dishes and snacks on mostly self-made smokers and grills. These were in no way comparable to barbecue parties he knew from the Netherlands. The American dishes were so full and pure in flavour that he decided to introduce this authentic way of barbecuing in the Netherlands, including slow (16 hours) cooked and smoked pork shoulders, sweet spareribs and tasty brisket.
In 2010 Smokey Goodness started at the festival of ‘De Rollende Keukens’ (‘The Rolling Kitchens’). Since then Jord and his crew regularly light up their smokers and barbecues at events and cater for private or business events.
Since the beginning of 2017 you can also enjoy his kitchen in Belgium. In the old tower of the brewery ‘De Koninck’, Jord opened their brasserie ‘Black Smoke’. Here he unites the American BBQ Culture with the sophisticated Belgian cuisine.
